I would attach the cable release, press the remote button once to turnover the mirror up, then wait for just a lull inside the breeze to press the remote button again and commence my exposure. However, with digital bodies, I think the self-timer put together with mirror lock-up will do. If you get very simple, simply delete that shot in-camera and try again.
